On his 4.6-hectare farm El Divisio, Luiz Guzman experiments with a variety of coffee processing methods. For this nanolot, Luiz chose the washed processing method and extra-long fermentation.
During the conventional washing process, coffee beans ferment in water tanks for approximately 20 hours. Thanks to applying an extra-long, 102-hour, fermentation, this washed nanolot developed a hint of tropical fruit flavours.
